π Ingredients
For the Chicken Curry:
Chicken β 500g (preferably bone-in)
Onion β 2 large, finely sliced
Tomato β 1 medium, chopped
Garlic β 5 cloves (crushed)
Ginger β 1-inch piece (grated)
Green chilies β 2, slit
Curd/Yogurt β 3 tbsp (whisked)
Mustard oil β 3 tbsp
Bay leaf β 1
Cinnamon stick β 1 small piece
Cloves β 3
Cardamom β 2
Cumin seeds β 1 tsp
Turmeric powder β Β½ tsp
Red chili powder β 1 tsp
Coriander powder β 1 tsp
Garam masala β Β½ tsp
Salt β to taste
Sugar β 1 tsp (optional)
For the Roti:
Whole wheat flour (atta) β 2 cups
Warm water β as needed
Salt β a pinch
Ghee or oil β for cooking

Step 1: Marinate the Chicken
Mix chicken with curd, turmeric, salt, and a little red chili powder.
Let it rest for at least 15 minutes.
Step 2: Prepare the Curry
Heat mustard oil in a pan until it starts to smoke. Add whole spices (bay leaf, cinnamon, cloves, cardamom, cumin).
Add sliced onions and sautΓ© until golden brown.
Add ginger-garlic paste and green chilies. Cook for 2β3 minutes.
Add tomatoes, red chili, coriander powder, and a pinch of sugar. Cook till oil separates.
Add marinated chicken and cook on high heat for 5β7 minutes.
Cover and cook on medium heat until chicken is tender (20β25 minutes).
Add garam masala and adjust salt.
Step 3: Make the Roti
Knead atta with warm water and a pinch of salt until smooth.
Let it rest for 10 minutes.
Roll into thin rounds and cook on a hot tawa. Smear with ghee or oil if desired.
