For the Chicken Curry:

  • Chicken – 500g (preferably bone-in)

  • Onion – 2 large, finely sliced

  • Tomato – 1 medium, chopped

  • Garlic – 5 cloves (crushed)

  • Ginger – 1-inch piece (grated)

  • Green chilies – 2, slit

  • Curd/Yogurt – 3 tbsp (whisked)

  • Mustard oil – 3 tbsp

  • Bay leaf – 1

  • Cinnamon stick – 1 small piece

  • Cloves – 3

  • Cardamom – 2

  • Cumin seeds – 1 tsp

  • Turmeric powder – Β½ tsp

  • Red chili powder – 1 tsp

  • Coriander powder – 1 tsp

  • Garam masala – Β½ tsp

  • Salt – to taste

  • Sugar – 1 tsp (optional)

For the Roti:

  • Whole wheat flour (atta) – 2 cups

  • Warm water – as needed

  • Salt – a pinch

  • Ghee or oil – for cooking

Step 1: Marinate the Chicken

  • Mix chicken with curd, turmeric, salt, and a little red chili powder.

  • Let it rest for at least 15 minutes.

Step 2: Prepare the Curry

  1. Heat mustard oil in a pan until it starts to smoke. Add whole spices (bay leaf, cinnamon, cloves, cardamom, cumin).

  2. Add sliced onions and sautΓ© until golden brown.

  3. Add ginger-garlic paste and green chilies. Cook for 2–3 minutes.
